Restaurants
A 10% tip is usually included in the bill, but feel free to tip an extra 5-10% in nice restaurants.
Hotels
50 cents/bag, doormen - $1-2 for hailing a cab, cleaning staff - $1/day at the end of your stay, either directly or left in an envelope at the front desk.
Guides & Drivers
Tip guides $10/person/day, tip drivers half that; an Andes trek may include a cook ($5/person/day) and a burro ($2-3/person/day).

Yes, they are the currency of Ecuador.
*Taxi drivers don't expect a tip but appreciate one of about 10% if they've been helpful.
*Galapagos Islands boat excursions -- tip naturalist guides $50-75/person and kitchen staff $80-100/person at the end of the trip.
